A wine stays sweet when sugar remains before fermentation finishes. That can happen because shrivelled or botrytis-affected grapes carry very high sugar, or because fermentation is deliberately stopped. What makes a sweet wine convincing is not the amount of sugar but its balance with acidity.

The source of the bubbles is equally defining. A second fermentation in the bottle tends to give a finer, more persistent mousse and bread-like notes; tank methods preserve fresh, fruity aromatics. Both are legitimate — the question is which experience you are looking for.
